Rabbit Meatloaf


When we have rabbit, we often grind at least some of it.  Ground meat is so handy during the week.  And there is no comparing a batch of our ground rabbit to any other meat; it is supremely tasty white ground meat.  The oat bran and the beer keep the loaf moist.  This easy dish is great with broccoli and fried potatoes.


1 lb. ground rabbit

1/4 onion, chopped

5 basil leaves, chopped

1/4 cup oat bran

1/4 cup Guinness, maybe an extra tablespoon or two would not hurt

1 chicken egg

1/2 teaspoon salt

3 dashes pepper

organic ketchup, for the top of the loaf


Preheat oven to 350 degrees.  Grease a loaf pan with a small amount of olive oil.  Mix meat with salt and pepper.  Add all other ingredients and dump into the loaf pan.  Cover the top with ketchup, approximately 1/4 to 1/2 cup.  Put the meatloaf into the oven and bake for 45 to 50 minutes.
