Monday pizza

This pizza is rather easy-particularly if you use store bought dough. And you can use almost anything growing in the garden!


1 cup warm water
2 1/2 teaspoons active dry yeast
1 teaspoon sugar

Mix the above ingredients and let sit until the yeast activates. It will bubble and the bubbling will spread over the entire top of the water.

1/4 teaspoon salt
approximately 2 1/2 to 3 cups of flour

Add the salt and mix. Add the flour, 1/2 cup at a time, mixing with a wooden spoon lightly. Do not overmix as that will make the dough stiff. The end result is a slightly sticky dough that is cohesive but does not stick horribly to the sides of the bowl and only slightly to your fingers.


1/4 cup sun dried tomatoes
2 fresh tomatoes

Blend in cuisinart. Boom. I don’t even add salt.


Add cheese and toppings. This pizza has cheddar cheese and parmesan cheese, as that is what I had in the fridge. Toppings are red peppers, zucchini, corn, and basil. I do salt and pepper the pizza once all the toppings are added.
