Easy Pumpkin Bars

The superfood power of pumpkin meets the protein punch of flax and chia seeds!

They go great with coffee!

Easy Pumpkin Bars

2 cups flour
1/2 cup sugar
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp baking soda
1/4 tsp salt
1/4 tsp ground cloves
1/2 to 2/3 cup flax and/or chia seeds
1-1/2 cups cooked or canned pumpkin
1/2 cup honey
2/3 cup olive oil
3 eggs

Dump all dry ingredients into a large mixing bowl. Mix with a wooden spoon. Add in all wet ingredients. Mix again with wooden spoon until all ingredients are well combined. Spread into large ungreased baking pan. Bake at 350ºF for 20-25 minutes. Bars are done when knife inserted into center comes out clean. Cool, cut, and enjoy!
